Pierre Paillard, Bouzy, Blanc De Noirs, Grand Cru
This ultra-confidential vintage comes from a single plot, just 30 ares, Les Maillerettes, planted in the heart of the family vineyard. This is the mother vine of all the black pinots planted on the estate.
It was inconceivable for the Paillards that this plot, planted with vines of about fifty years, is the subject of a specific cuvée, which is the quintessence of the expression of Pinot Noir on the terroir of Bouzy.
In the interest of a pure expression of grapes and terroir, only the juice of the first two presses is vinified. After a maturation in vats of 8 months and a slow aging in cellar of more than 4 years, this Blanc de Noirs will delight all the amateurs of Pinot noir champenois … and Burgundy!
Its dense and harmonious bouquet reveals a superb fruit around grapes, strawberries and cherries, plums. Brioche aromas and liquorice notes complete the beautiful aromatic palette. It’s greedy, vinous and racy. In the mouth, a pleasant freshness emerges, carried by flavors of citrus, while the soil expresses itself with density on a long and saline finish.
This Grand Cru is undoubtedly a great champagne for lovers of fine wines and gastronomy. The multi-star tables like Guy Savoy or L’Assiette Champenoise did not make a mistake … It takes its full dimension when it accompanies foie gras, lobster, sole or sweetbreads. Its strength and character also allow it to sublimate more spicy cuisines, such as Thai cuisine. A delight !
