From grapes harvested manually. Before the fermentation is carried out maceration pellicle, that is to say that the juice and berries are placed together in a tank to extract the material. The drop juices are then selected (juice that flows without pressing) before fermentation in barrels. The aging of this white Bergerac takes place in oak barrels on the lees with regular stirring to put the lees in suspension and thus give fat.
Very fine nose with subtle aromas of white flowers. Bold, round, beautiful length in the mouth with a note of pear, fresh almond. Its roundness allows a good accompaniment of country deli meats, white meats in sauce, scallops, mussels and pressed cheeses.
