Chateau Hauterive Le Haut, Au Finistere
In the heart of the Corbières, on the prestigious terroir of Boutenac four centuries of winemaker tradition revived by current techniques of viticulture and winemaking, this is the bet held today by Fabienne and Jean-Marc Reulet. The vineyard of 90 ha is spread over four pedoclimatic sectors:
-Schilo sandy area of Boutenac: plain area producing varietal and country wines, located north of the town of Boutenac.
-Sector clay-limestone hillside Caumont Cayenne: Terroir of appellation producing colourful wines, with scents reminiscent of the nearby scrubland.
-Silicone clay pit of the sandstones of the Boutenac pine forest; in a magnificent environment of hillsides and groves of pines, the vine produces there rich wines, well-built, it is the soil of predilection of the Carignan grape variety.
-The Hauterive Sector – Gasparets, the cradle of the great wines of the region. Here the old vines of Carignan and grenache offer all the expression of the terroir and the grape variety on soils of molasses characterized by a carpet of pebbles. At the foot of this hill alluvial soils are reserved for the production of Cabernet Sauvignon and Grenache grape varieties. Dark cherry colour, aromas of red fruits and spices, peppery notes. The tannin are present but fine, the structure is harmonious. This wine goes very well with regional dishes such as cassoulet, sheep cheeses (here Villetritouls cheese) but also a grill of fish marinated in olive oil, garlic and herbs from Corbières.
Terroir: Sandstone of Boutenac, molasses with pebbles of Hauterive.
Grapes: Old vines
Harvest: manual for Carignan and Mourvèdre, in tank of whole grapes. Destemming for Grenache and Syrah.
Vinification: maceration for at least 14 days under controlled temperature.
Aging: in barrels of 2 and 3 wines for 12 months.
