The vineyard is located south-east of southern Ardèche. A characteristic wine from an old Ardèche grape “Le Chatus”, the grape likes the chestnut Cevennes terraces. The Chatus is only planted on the Cevennes terraces facing south sheltered from the wind, on soils with a high percentage of sandstone. It is found in the municipalities of Payzac, Largentière and Rosières. Chatus is harvested at the end of September with a high natural degree. Then follows a traditional vinification after destemming and crushing. This wine is aged in oak barrels for 12 months.

From a purplish garnet color the first years, it evolves towards the dark red, its sustained dress is highlighted by a great brilliance.
The olfactory characters are complex. The dominant notes are aromas of over-ripened fruit (quince paste, figs, prunes with alcohol) and empyreumatic (coffee, tobacco) with a touch of vanilla and cinnamon. The powerful and structured mouth, rich in tannins, denotes a great typicity.
