This Faugères red wine is generally made from carignan and syrah. The selection begins in the vineyard and continues in the cellar by tasting. Thus, the assembly varies from one year to another. The vines come from slopes of primary schist , very dry and not very fertile. As a result, the yield is 20 hectoliters per hectare. The manual harvest is followed by a traditional vinification with indigenous yeasts .
The aging takes place for 18 months, including 12 in barrels with little new wood. This process gives deep and dense wines with a very present fruitiness . In the mouth , the tannins are melted , and appreciate on a note of freshness. This wine has an important aging potential . When tasting, do not hesitate to decant it for several hours and serve it at 17 ° C.
