J.M Gobillard & Fils Cuvee Prestige Rose Millesime is a wine from Champagne, region of France, Champagne appellation covers 27 500 hectares on the site of an ancient sea covered with a layer of chalk of 200 meters deep. This soil provides a good drainage and a thermal storage for the roots. The northern and continental influences softened by oceanic climate from Normandy are ideal for the grapes development. Between an altitude from 130 to 180 meters, this appellation has to face frequent spring frosts and summer temperate improving the finesse of the wines. Wine called Champagne is only produced in this region with grapes from this region. Three varieties share the Champagne vineyard: Pinot Noir, Chardonnay and Pinot Meunier. Developed in the late seventeenth century, the process of sparkling wine making resides in the second fermentation in a closed bottle by adding the “liqueur de tirage” (yeasts and sugar liquor). In the bottle, which is horizontally stocked in a dark place, sugar decomposes into carbon dioxide which is trapped into the wine, giving those delicate and slight bubbles. This ancestral method also includes the shaking of the bottles to extract the dead yeasts through the cap, most of the time by using frost.

Light yellow dress. Inviting nose evoking the flesh of apple and pear. Alert mouth, fleshy attack on the fruit. The whole is fresh, lively, ideal for the aperitif.
