Girecul La Grabiere, Cuvee Madame, Monbazillac


Cuvée Madame is a painstaking berry-by-berry selection of the best botrytised fruit in each vintage. The first selection is made in the vineyard over the course of several passes, followed by a carefully sorting at the cellar to ensure that only the most perfect examples make it into the final cuvée. At this advanced stage of ripeness and rot, there is precious little juice remaining in the berries, yet it is important to press them gently to extract only the purest essence of the grapes – as a consequence the volume is minuscule but it is incredibly concentrated and complex. The wine is fermented in new French oak barrels and ages for 25 months before bottling.
